Celebrity butcher Tom Mylan is too busy to call us!

This butcher shop is so cutting edge, it’s going to have a press preview.

Tom Mylan — the man who essentially introduced hipsters to the joy of prime meat — is sharpening his knives for his eagerly anticipated new venture: a full-service butcher shop and culinary school.

The borough’s food journalists, who have long praised the legendary butcher, will tour his new chop shop, dubbed “The Meat Hook,” and its attached cooking academy, “The Lab,” on Nov. 10.

The acclaimed knife-wielder — who cut his teeth, among other things, at Marlow and Daughters in Williamsburg — has partnered with fellow Marlow-family butcher Brent Young to offer a wide selection of fresh cut meat and prepared food.

Meanwhile “The Lab” will offer stove space to home chefs and culinary pros for classes and demos to Williamsburgers interested in learning from the best.

Though Mylan couldn’t be reached for comment by The Brooklyn Paper’s cleaver-sharp deadlines, sources familiar with the project said heads will likely start rolling on Nov. 11 — in time for the Thanksgiving rush.
