Park Slope will soon get a butcher shop that even Jonathan Safran Foer could love.

Fleisher’s Grass-fed and Organic Meats — a ma and pa shop run by former vegetarians — will open in September, selling upstate-raised meat for “the ethical carnivore.”

“People in Park Slope care about what they eat — and where it comes from,” said owner Jessica Applestone, who runs the business with her husband Joshua. “It’s the perfect fit.”

Indeed, there’s only one other true butcher shop in a neighborhood obsessed with the “locavore movement” — with everyone from the hot dog slingers at Bark to novelist-cum-moralists like Jonathan Safran Foer weighing in on the subject.

Fleisher’s — which promises an “old-school butcher feel” with a “modern-day mission” — will offer hormone-free, daily-ground meats, along with varying cuts of lamb, pork and beef raised in farms hand-picked by the Applestones. Beef prices range from $9.99 (for grain-finished London broil) to $22.99 (for grass-fed boneless rib eye).

Owners — who said they ditched vegetarian and veganism after learning meat could be grown and sold “the right way” — will sell organic rotisserie chicken, seasonal veal and duck.

Additionally, they will sell frozen ready-made dinners, using “the entire animal” — from lard (for pot pie crusts) to bones (for stalks and soups) along with offering bicycle deliveries. They will also host a reading of their book, “The Butcher’s Guide to Well-Raised Meat” at PowerHouse Arena on June 9.

Meat-munching Park Slopers are just bummed the shop won’t around for most of Prospect Park’s summer barbeque season, explaining they are already Fleisher’s fans.

“As far as I’m concerned, it should be illegal to grow meat in any other way,” said Joe Holtz, general manager of the Food Coop. “Hopefully there are enough people around here to support eating the right stuff.”

I'm sorry, but veal can never be grown "the right way."

Calves raised for veal are taken from their mothers immediately after birth and raised so as to deliberately induce borderline anemia.

What is so wonderful about removing a perfectly happy/healthy animal from the face of the earth? We don't "need" to kill or eat these creatures - Seems like the kindest thing would be to stop breeding them just to be slaughtered for our frivolous, momentary gratification.

The photo showing half of a dead pig makes me want to vomit. People really want to eat flesh? Really? Plenty of road kill around, if your customers want dead bodies how about those? Or better yet grow plants! Fruits, veggies, beans, nuts, and grains for a flavorful, beautiful, healthful food selection.

While I've known a few vegetarians that have gone back to eating flesh, I'm doubtful that the other half of this butcher team was vegan. Veganism isn't just a diet; it's a lifestyle of non-violence and doing the least harm possible. Perhaps this person was a "dietary" vegan for health or other reasons and not a true vegan, living and promoting peace and compassion. Still, it's a sad day, especially for the animals.

so excited to have Fleisher's coming to Park Slope! making the switch to grass-fed has been transformative for me, as for many others. especially looking forward to the butchery classes, as learning to process meat myself has been a dream for a while.

I see it says "grown and sold the right way". One very big part of the "it's ok for me to eat your body because I'm causing you no suffering whatsoever..." is, how it's killed. Are they killed "the right way"? There is no "right way" to kill an animal other than the way they are put to sleep to end their suffering. As in the case of someone's pet. But, you can't do that and then eat their body. So, they have to be killed in a way that IS painful and scary...and you know that. Also, even if you COULD raise happy, respected animals that die in a way that is not PAINFUL and TERRIFYING, most of the dead animal eating people on this earth can't. There isn't enough room for all the animals that people eat everyday! These animals are force bred. Artificially inseminated to produce babies that humans eat. They would NOT OVERPOPULATE, according to some ignorant comments I've heard in the past. Everyone that has ever pet a dog or cat or even spoken to a human has experienced knowing another being that feels the same feelings that every single one of these 427,863 souls felt. EVERY DAY! That does not even include chickens, turkeys and ducks. Now, tell me how you are going to raise AND KILL them all with the respect that you ADMIT they deserve? Why is it ok for you to make lots of money from the dead bodies of some of them? You are a hypocrite. Some of them may live decent lives but they are all dying the same death and you are participating in it and profiting. MOST OF THE HUMANELY RAISED GO TO THE SAME SLAUGHTER HOUSES AND DIE THE SAME WAY ANYWAY AND YOU KNOW IT. Actually, putting an animal "out of it's misery" is considered a humane thing to do. So, the factory forced ones should be killed more than the ones that you are responsible for because your animals are happily living their lives... You should be ashamed of yourself. Every time you look at, handle, sell, eat one of them, they'll be with you. Every night before you go to sleep. They'll be with you. I think you are mean and selfish. Maybe even more so than someone that has never even given it any thought. Because you know- and do it anyway- and profit.

They were never vegans, never committed to non-violence and compassion. Disgusting. Hope they and all the "Meat-munching Park Slopers" enjoy their first open heart bypass as much as they enjoy knawing on the bloody, dissected corpse of the murdered creatures.

And after the bypass, hope they enjoy gripping that little pillow to their chest when they have to cough or get the hiccups--lots of pain after the surgery that many don't even know about...(the hospital gives them that special little pillow after the surgery).

Kill the non-human animals today--then they kill the human animals later...as for "this place will be mobbed night and day"---yeah, probably so...but while some are mobbing the butcher shop, others are mobbing the operating rooms across town. Bon appetit.

LOL, did some animal rights blog link to this? These trolls aren't even local. Animal rights fundamentalists HATE it when people defect from their fold. I did an interview with LetThemEatMeat.com and continue to get death threats from them. The truth is that there are MANY ex-vegans, enough to be a little mini-community. I met my boyfriend through this community.

Either way, Fleichers is great and if you would read the book they just wrote you'd find out that none of the garbage spewed here is true. The veal they buy, for example, is NOT from calves raised in an unnatural way.

You trolls are totally ignorant (don't worry, I was too). Maybe you guys should pick up a copy of Meat: A Benign Extravagance. But the fact that meat in moderation isn't bad for you or the environment might blow your minds.

For all of those who insist of taking the extreme route that all meat-eaters are always horrible despicable murderers and that animal agriculture that works to minimize animal suffering is still awful and not to be supported, wouldn't it make sense from an animal welfare perspective to realize that many people will never stop eating meat no matter how much you call them names and insist that the next day they will be carving up and devouring old folks and school children, and whatnot? And that endorsing stores like this will help greatly to reduce animal suffering as a whole?

It strikes me as inconsistent and frankly selfish that those who profess to be in favor of animal welfare would choose to continue their diatribe against that which promotes animal welfare and shifts a great number of people away from far worse treatment of animals. The only explanation I can think of for such hostile extremism is the selfish motive to continue wagging one's finger and being condescending to others.

What a wonderful addition to the neighborhood. Eating the way my grandparents and their parents and their parents ate - unadulterated meat from the whole animal, lovingly raised, butchered and prepared by actual people - is how I keep my own family healthy and free from the obesity all around us (no processed or low-fat crap for us!)

How come vegans don't care about the complete destruction of the habitats of entire ecosystems in the growing of grain? The American Prairie is gone to a sea of wheat, corn and soy. Aside from the perennial plants that have to be eviscerated, there is the habitat of thousands of animals. And the farming itself kills thousands of creatures. The diversion of rivers for irrigation kills countless fish, trees, and tons of other animals that rely on rivers and of course, destroys the soil for future crop growth. Is that sustainable? See the Fertile Crescent. Not to mention the fertilizers, which must be animal bones, animal feces or oil based synthetics. Wanna stick with oil? Veganism is just as unsustainable as the existing CAFO meat system. The only solution involves native animals in a permaculture, the only way to restore the soil. Eating is death, there is no way around it. Some day soon our bodies will be eaten by microorganisms and the circle of life will continue.
I am lucky that well raised quality meat is so available in my neighborhood.
